Ingredients:
- 1 and 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/2 cup blackberries, mashed
- 1/2 cup semi-sweet chocolate chips
- For Chocolate Ganache Frosting:
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips
- 1/2 tsp vanilla extract
- Fresh blackberries for garnish
Instructions:
Warm up your oven to 350F 175C and put cupcake liners in a muffin tin
Mix the cocoa powder, baking powder, baking soda, and salt in a bowl with a whisk
Put away
Mix the softened butter and sugar in a different bowl until the mixture is light and fluffy
One at a time, add the eggs and beat well after each one
Add the vanilla extract and mix well
Slowly add the dry ingredients to the wet ingredients, mixing them in with buttermilk every so often
Start with the dry ingredients and end with the buttermilk
Dont mix any further than that
Add the chocolate chips and mashed blackberries slowly to the batter
Fill each cupcake liner about two thirds of the way to the top with batter
After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
Take the cupcakes out of the oven and let them cool for a few minutes in the pan
Then, move them to a wire rack to cool completely
For the Chocolate Ganache Frosting, heat the heavy cream in a small saucepan over medium-low heat until it starts to bubble
Take it off the heat
It will be smooth and well mixed after you add the chocolate chips and vanilla extract
Allow the ganache to cool a little
Spread the ganache over the cupcakes or dip the top of each one into it to give them a shiny look
On top of each cupcake, put a fresh blackberry
Wait until the ganache is set before you serve it
