Ingredients:
- 2 cups almond flour
- 1/2 cup coconut flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup cold butter, cubed or dairy-free alternative
- 2 cups shredded cheddar cheese or dairy-free cheese
- 2 large eggs
- 1/4 cup unsweetened almond milk or dairy-free milk
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions:
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
In a large mixing bowl, combine the almond flour, coconut flour, baking soda, and salt
Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs
Stir in the shredded cheddar cheese, fresh parsley, garlic powder, and onion powder
In a separate bowl, whisk together the eggs and almond milk
Pour the wet ingredients into the dry mixture and stir until a dough forms
Using your hands, shape the dough into 2-inch round biscuits and place them on the prepared baking sheet
Bake in the preheated oven for 15-18 minutes or until the biscuits are golden brown and firm to the touch
Allow the biscuits to cool slightly before serving
