Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup plain yogurt
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup mixed berries blueberries, raspberries, strawberries
- 1/4 cup fruit preserves apricot, raspberry, or your choice
- Powdered sugar for dusting optional
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with paper liners
In a large bowl, whisk together the flour, granulated sugar, baking soda, baking powder, and salt
In a separate bowl, whisk together the melted butter, yogurt, egg, and vanilla extract until well combined
Pour the wet ingredients into the dry ingredients and stir until just combined
Do not overmix; its okay if there are a few lumps
Gently fold in the mixed berries, being careful not to crush them
Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full
Make a small well in the center of each muffin with the back of a spoon and add a teaspoon of fruit preserves to each well
Bake in the preheated oven for 18-20 minutes or until the scuffins are golden brown and a toothpick inserted into the center comes out clean
Allow the scuffins to cool in the muffin tin for 5 minutes, then transfer them to a wire rack to cool completely
Once cooled, you can dust the scuffins with powdered sugar if desired
