Ricotta cheese adds a creamy richness to this easy pasta dish, which also has bright spinach and sweet bell peppers. Its an easy, quick meal thats great for busy weeknights.
Ingredients:
- 250g pasta penne or fusilli
- 1 cup ricotta cheese
- 2 cups fresh spinach, chopped
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
Cook pasta according to package instructions
Drain and set aside
In a large skillet, heat olive oil over medium heat
Add minced garlic and cook until fragrant
Add sliced bell peppers to the skillet and saut until they begin to soften, about 5 minutes
Stir in chopped spinach and cook until wilted
Add cooked pasta to the skillet, followed by ricotta cheese and grated Parmesan
Toss everything together until well combined
Season with salt and pepper to taste
Serve hot, garnished with extra Parmesan cheese if desired
